Kenny’s Breakfast Risotto

Risotto for breakfast? I had never had risotto for breakfast before until my husband served me this version. Bacon, sausage, fried egg and what’s not to like?
1 cup Arborrio rice
1.5 cups chicken broth
6 strips of thick cut bacon
2 pork sausages
1 yellow onion (finely diced)
1 large bulb of garlic (about 12 cloves) (finely diced)
1 tomato (diced into small pieces) or 10-12 cherry tomatoes (cut in halves)
extra virgin olive oil
salt
pepper
1/4 cup finely grated parmesan regianno
1/3 cup finely grated sharp cheddar cheese
Tobacco sauce
Eggs
Fry bacon in pan. It does not need to be crispy. Chop into pieces. Set aside.
Add rice, broth, and 2 tablespoons of olive oil together in a pot. Bring to boil while covered. Once boiling, stir and simmer with cover on for 15 minutes. While simmering, prepare the rest.
Cook chopped onion and garlic with olive oil in medium sized saucepan or wok on medium heat. Add in sausage and cook thoroughly. Add in the cooked bacon and tomato.
Add the bacon, sausage, garlic, and onion mixture to the rice after it has been simmering for 15 minutes. Mix in the cheeses. Add two dashes of Tobasco. Season with salt and pepper to taste.
Serve with poaches eggs and toast.
